Then we add the "Cajun trinity" of seasonings: onion, bell pepper and celery. Next we add many other fresh ingredients including chicken, smoked pork andouille sausage, parsley, green onions and Cajun spices. Finally, we simmer it all down just right to create a gumbo that just can't be beat. Which came first, the chicken or the gumbo?

Gumbo originated in south Louisiana, and the word "gumbo" itself is taken from the African word for okra. Early gumbo recipes almost always used okra as a thickening agent, but this was later replaced with roux. The chicken and sausage gumbo combination has a long history in south Louisiana and is also closely tied to Mardi Gras. You may have seen or heard about the "Courier de Mardi Gras" celebrations that happen each year in rural south Louisiana. Masked riders on horseback go from farm to farm asking for the "donation" of a chicken. At the end of the day, the community prepares chicken and sausage gumbo for all to share.
