Boudin sausage is one of the most classic Cajun dishes of all time. In fact, if you drive through any town in south Louisiana you will see signs advertising "Hot Boudin" everywhere - from corner grocery stores to restaurants and even gas stations. Traditional boudin sausage - c'est bon, cher!

The traditional version of boudin sausage is a mouth-watering blend of cooked pork, rice, Cajun spices and seasonings such as green onions, bell peppers and parsley - all stuffed into a sausage casing and served piping hot. In Louisiana it is not uncommon for people to eat boudin for breakfast, lunch or anytime of day as a special treat. It's especially good on a cold winter day when you want to spice things up a bit. Boudin sausage also makes for a great appetizer or party food served in thin slices. While boudin is normally steamed or braised, it has also become popular to serve grilled boudin at tailgating parties and barbecues.
