Traditional boudin sausage - c'est bon, cher!

The traditional version of boudin sausage is a mouth-watering blend of cooked pork, rice, Cajun spices and seasonings such as green onions, bell peppers and parsley - all stuffed into a sausage casing and served piping hot. In Louisiana it is not uncommon for people to eat boudin for breakfast, lunch or anytime of day as a special treat. It's especially good on a cold winter day when you want to spice things up a bit.
